I know, I know you have heard before but I am on a mission to get dinners back on track, we were doing well until last week and then we slid right back down that slippery slope to the bottom.
Tonight is Baked Sausages with Mashed Potato Bake and Savoury Roasted Brussel Sprouts.
I found a recipe called Savoury Roasted Sweet Potatoes and OH MY GOSH so good. I now use the seasoning mix on Brussel Sprouts, Butternut Squash and Sweet Potatoes.Last edited by SassyAshley; Sat, Nov 11th, 2023 at 05:47 PM.

@harbie I had to Google images of bucatini pasta....never heard of this before. Kind of looks like a thicker strand of spaghetti but with a long hole running inside the full length of each noodle....cool!
@SassyAshley oh haven't we all done something similar to that? Promise to go back to an organized meal plan ( healthy if possible ) , but for us as soon as the temps dip just a smidge we start breaking out the comfort food recipes. ha ha
Today's puzzle is " when is a beef stew not a beef stew? " When you pour it in the bottom of 2 deep dish pie crusts, place the top crust over and bake! Meat Pies! Mmmm. They are almost put together, final mixture is simmering. This will be our reward meal for being brave and getting our covid shots this afternoon. DH gets his flu shot too, so he can have a 2nd piece of the meat pie.....enjoy the day all!

The meatpies look fantastic @walkonby . Interesting you used bucatini @harbie , we went to an italian restaurant last month and it was the only pasta they offered. I wonder if it's become the pasta of choice now.
We had cabbage soup last night and planning on a repeat of it for lunch and dinner tonight. Hoping to thaw some cornbread for dinner as well.30

@crafter I finally found it at RCSS so I stocked up instead of heading the states to Fred Myers. I actually prefer bucatini to spaghetti since it's thicker.

Tonight we are having Homemade Pizza, I have had a serious craving for over a week now.

My very first time in a Cob's Bread store. DH wanted to buy a loaf of sour dough to go with his soup. Yes it was pricey BUT such a hearty loaf, still warm, and the fellow offered to slice it half & half. Thick slices for DH, thin for me. Wow....the flavour and chewiness was spot on. I'll never be able to shop at that plaza again, the temptation to return there is too risky.

Feeling super tired tonight between work and getting my shots so keeping it simple with Chicken Enchiladas, as always filling is full of Mushrooms and Peppers to up the veggies.

Zuppa Toscana(plant based of course). I used spinach instead of kale since I wasn’t interested in trekking down to the garden to get some. It’s so yummy.

I’m on a soup bender
. Actually not only do I love soup but I also have a 20lb bag of potatoes to use.
I winged a spicy creamy potato and corn soup at lunchtime so some is headed to my parents and the rest is our dinner tonight and Dh’s lunch tomorrow.

I took out a Pork Loin to put in the Slow Cooker but when I got back from the office it was still quite frozen and I was feeling horrible (my shots knocked me out) so that will be tomorrow.
