Probably a smart idea, but I semi-deep fried it, the traditional way. . . Wouldn't phyllo be quite different?
I didn't find the pastry hard. But I was disappointed the potato mixture wasn't as spicy as I would've liked. I was surprised because I added chili and a scotch bonnet pepper to mix. It was somewhat flavourful, but I guess I just had a certain expectation.
The potato mix had peas, carrots, fresh ginger, 1 scotch bonnet pepper, garam masala, tumeric, garlic, onion, chili, fresh cilantro, salt.
I think next time, I would add another scotch pepper and some cumin
