I made chicken dumpling soup for supper and it was ready just as Dh walked through the door. Our twins didn’t want to eat it. Our son eventually ate it, but he says he didn’t like it very much. I texted the dumpling recipe to my dad.

I made up a very large amount of spaghetti/meatballs on the w/e.
DH and DS had planned on taking some in for their work meals on Monday. I went ahead and cooked up some lovely salmon steaks, mashed spuds and cooked carrots to have their Tuesday work meal made ahead, I even had their containers all filled up with the portions.
Later on as I came back in the house and they were getting ready to leave I started to tell them salmon was in the fridge and they laughed at me and said they already saw it and packed it for Monday's meal!! ( they said pasta tastes better as a leftover but they wanted the salmon meal fresh! )
Funny guys!

Last night I got ambitious and actually made 2 dinners, so their was a choice, didn't care which was chosen as whatever was not eaten would go in the fridge for later in the week.
First I made a pot of Potato Soup, which I must say was amazing (did not eat for dinner but had to try a small amount to make sure it was good)
Second I pulled some frozen Tortellini from the freezer and had a part jar of Pasta sauce in the fridge to use up. Since I was not pre cooking the tortellini I added some water to the sauce mixed it up and baked it for 45 minutes, added cheese to the top and continued baking for 15 minutes. This is what I had for dinner, it was good but is really is cheesy goodness ever bad????
Tonight I need to go out after work and the number of places/things I need to do keep increase so thinking it will be a take out kind of night. With that being said I found some gift cards last night I thought had already been used up, turns out they weren't just put in the wrong spot so thinking tonight's dinner will not $0 out of pocket2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Tonight I'll just make biscuits and gravy. I will use pancake mix and I bought more cans of hot chicken sauce online from walmart that are on clearance for .54 cents. I'm sure they will probably run out of the hot chicken sauce at some point but so far I bought about 15 of them lol.

Braised lamb shanks with star anise.
My daughter doesn't care much for lamb, so also making flank steak in black pepper sauce, its been marinating for over a day.
Chinese greens and leftover basmati rice should be tons of food.
But, I think she has talked me into also making Szechuan Shrimp and I have a package of frozen Pork Shumai.
It may be a complete feast.
I may have to go get some beer!

Tonight I am baking pork ribs in BBQ sauce and will serve with a mashed potato/rutabaga mix.

Wednesday’s supper plan is nachos with grated cheese melted on top, meat and veggie sauce, sour cream, salsa, and a glass of milk. We enjoy it and our kids usually do too, as long as the meat isn’t too spicy.

Last night we went to Swiss Chalet and ordered a bunch of appetizers which I love doing. Used a gift card which made my out of pocket very minimal.
Tonight I am not sure yet there is a chance Mom's shift at work might get changed so I am waiting to hear on that. If it does not get changed I am having leftovers as my fridge is full of them. I am thinking Meatloaf, Mashed Potatoes and Mushroom Gravy.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

I have a turkey in the slow cooker! Will make mashed potatoes, broccoli/carrots and gravy to go with it.
Then tomorrow is leftovers woohoooooo!

Back to Wednesday night Trivia at the pub.
Ribs are on special, seems likely that is what I will have.
I keep my own hot sauce there, for some added heat.
