..making turkey soup today! Easter Sunday I cooked a turkey and froze the carcass, all the other bones incl wings & drummies, etc so have everything in a pot now simmering to make the stock (with onion, thyme, carrot, celery, spices, etc, etc). Saved some white meat & dark meat to put in the soup. Lots of meat to make turkey sandwiches as well. It already smells wonderful!!!

bought a discounted pkg of liver ( maybe a pounds worth ) but it said previously frozen on it, so I coated and pan fried the whole lot of it which made enough for 3 meals, so froze 2 for another date.
Rounded out my plate with 1 cup mashed sweet potato and 3 cups boiled savoy cabbage.

Had to take the day off for a doctors appointment and a dentist appointment and it turned out to be a really nice day. Going to spend the afternoon taking down the xmas lights and then do a little bit of out door spring clean up.
BBQ burgers and store bought cabbage salad.

Sunday’s supper was Jane’s chicken fingers in pitas with veggies and marble cheese.
Monday's supper was toasted bacon, tomato, and cheese sandwiches.

This might be a hodge podge. Left over chicken leg with 1 grilled cheese sandwich made in air fryer. With a bunch of raw cucumbers and carrot sticks. For my snack later I'll have some frozen grapes which are so good.

..baking potato..and I butterflied a pork tenderloin and pounded it flat and stuffed it with a mixture of sauteed minced onion, mushroom & garlic, spinach, bread crumbs, S&P, thyme & summer savoury, tied it up and then seared in the same pan...that's roasting in the oven now..and going to make a sauce, with chopped apples, cream cheese, milk, white wine, thyme etc to go over the pork

Staying with family this week so no cooking for me.
Monday was Chicken Breast, Rice, Mixed Veggies & Salad
Last night was Veggies Stir Fry plus a mix of leftover meats, I took chicken but Pork Chop and Sausage was also an option
Tonight they promised their little girl since it is McHappy Day they would do McDonalds tonight so that is on the menu for everyone2022 is going to be my year, the year I find organization in my life and the year I focus on myself,
