    Tomorrow I am planning on MEXICAN I plan on making ceviche rojo de camaron with snapper and bay shrimp , carnitas with homemade tortillas if MIL has made them , salsa and guac and finally either a drunken plantain(if I can find them) or just fruit

    As for tonight I hope the chix thighs will be defrosted and then I'll make grilled sweet and sticky chix thighs from RR http://www.rachaelrayshow.com/food/r...harissa/print/ with rice and a salad.

    I did a crockpot lentil spinach and onion soup that ended up as stew...Too many lentils because I didn't measure LOL! Still really good, but wish I had room to add potatoes and carrots now that it's more stew like!

    Last night, husband had leftover roast chicken, potatoes, and carrots - and then supplemented it with like four salami sandwiches, lol! (yes, he has hollow legs...)

    My son made grilled sammies for the two of us, and wow, were they good! Montreal smoked meat on french bread, with potato salad (yay for good deli salads!).

    Tonight's meal is as of yet a mystery....

    Last night I made soft tacos and mexican rice, with a salad.
    Tonight I am making perogies, with restaurant style sour cream (yum - major guilt!) shredded cheese, and also a salad.

    I've moved for work last week and my fiance is still back home... who the heck knows what he is cooking up - can you say major amounts of takeout!

    Yes, it's better! I'm nowhere near 'myself', but it's bearable. I know I do have to be really, really careful, because at this stage any little thing can get it back to horrible.

    I tried this last night, again tonight. I used coconut oil, high heat, it worked great, thanks! They browned a bit on the outside. My veggies are not squishy! Will add garlic next time.

    The coconut oil does stand up to high heat very well, doesn't smoke.

    Chicken breasts chopped up, cooked with veggies (onion, celery, broccoli, canned baby corn), with home made sauce and served on a bed of no yolk noodles with a glass of milk. Pretty yummy
