    It's super easy.

Soak the basmati rice for 20-30 min in cold water. After it's drained I just add an oil to the pan(evoo, coconut, whatever you want)and several very generous shakes of our fave hot sauce. Toss the rained rice in and "sautee" for a few moments and it's coated. Add warmed chix stock and add salt. Cover and cook as normal and when it's cooked and fork fluffed I add a can of fire roasted tomatos that I drained.
I usually make the rice ahead of time and then warm up in the microwave and it's perfect!

    Tonight was leftover mexican food.

I am going to make split pea soup tomorrow like my grandma. I don't like stew because of the gravy, but my grandmother makes her split pea soup with beef, so it's basically the same thing. Cannot wait.

last night was Koolaid ribs, roasted broccoli & rice.
    Soooo yummy!
If anyone is interested I got the koolaid rib recipe here
    http://www.kraftcanada.com/en/recipe...ibs-88627.aspx

I use any kind of bbq sauce i have on hand but it HAS to be orange koolaid brand. Not tang, not orange crystals, but real koolaid (the kind you don't have to add sugar too)

Last night I had tomato soup, and tuna salad on hotdog buns (my fave). Ate early since I didn't have lunch, and went to bed early.
Have no clue what my husband ate, oy! Son was away.

For tonight, no clue - son is away again - he and friends drove back and forth to Regina yesterday and are doing the same today, to attend car shows and racing.

We had baked chicken breast (which I nearly never buy, thighs at Costco is our standard chicken), along with mixed veggies and potato. Only had two potatoes left, DS and I had to share one.

In my sons words " OH you should sell these in a restaurant!" LOL
I had reservations on making them at first but now it is the only way I will make them.
I use pork back ribs, and closely watch the oven around 1 hour because if you burn them it will just ruin it.
I also usually add half cup extra bb sauce near the end so they are extra sticky!
But once you get that lovely caramelization on the ribs from the sugars in the koolaid, boy oh boy they are good!
Report back if you decide to make them, like to see what you think of them

Supper was supposed to be roast beef but we got back late from running errands, so it was hot dogs and fries for the family and leftovers for me. No picture, but I do have one of yesterday's ribeye supper:
