Tonight's fare was creamy carrot soup. First time I've made it and it was wonderful. I found organic carrots at Walmart that I was able to use coupons on so 4 large servings of soup cost approximately 2$ to make and all ingredients were organic. Much less expensive (and healthier!) than store bought.

Taco veggie quesadilla topped with a little sour cream, lots of salsa and lettuce.
Not bad for a dinner that went so wrong, was supposed to have chicken stir fry, forgot to take out the chicken. Than i was going to have Fajita Veggie Quesadilla only to find out someone threw out the seasoning someone gave us, so I tried to make my own seasoning only to find out someone used all the cumin and didn't buy anymore. Luckily the taco seasoning worked, wasn't sure because of it is homemade and needs to be simmered down.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

tuna bake.. some penne noodles, 2 cans of tuna, a white sauce & veggies.. cooked the noodles, tossed it together, stuck it in the oven for 25 mins and topped with parm

BBQ if it doesn't rain..haven't decided what yet, maybe steak? pork chops? baked potato, green salad, rolls..I might dig into my seafood stash and take out some crab and make a really good , simple appetizer- mix the crab with cream cheese, green onion, a little mayo, etc, etc and bake in wonton wrappers in a muffin pan, they are so good! or maybe just a crab dip...if it rains much I will just order in pizza!!

DF and I were supposed to go to a party but my big pregnant a$$ slept 4 hours interrupted every 20 mins , went to work and work Tommorow am so he's off alone, DD is at her yiayia's for the night so maybe some solo sushi and girl shows

Tonight we had chicken drumsticks in a bbq glaze with mashed potatoes, green beans and carrots (fresh, not canned) and a nice salad. I used some curly lettuce, dill, green onions, tomato and cucumber slices with a french dressing. dessert was vanilla ice cream with some smuckers chocolate sauce!

Tonight was glazed "ham steaks" (bought a little ham on sale and cut my own, WAY cheaper) with fried potatoes I precooked the other night when I was making smashed potatoes and saute carrots & celery, odd mix I know but it was what I had left of my cut veggies that I was going to use for my stir fry that never happened and wanted to use them up before we buy more veggies for next week.

Our local Humpty's restaurant is having a customer apprecation weekend. We went out for their BOGO 10oz steak supper when you buy 2 beverages. LO also eats free on Friday....any Friday. Tomorrow for lunch I plan on making crash potatoes (recipe from here), marinated veggies skewers (zucchini, mushrooms, and garden cherry tomatoes), with cheddar cheese smokies and a glass of milk.
Other meal ideas include...
baked spaghetti squash (from my garden) with parmisean cheese, roast ham, boiled beets (from my garden).
Fin and Hatti (have to use up LO's HOMO milk because he does not drink a 1L fast enough yet).
Nacho's with meat sauce (FPC marble cheese, FPC salted nacho chips, etc)

Dinner tonight will be hamburger steak with mashed potatoes, vegies (probably canned peas) and of course a nice mixed salad with an oïl and vinegar dressing. Nothing elaborate. Dessert will be homemade lemon meringue pie.

Yesterday I cooked up a crockpot roast. I had a couple of slices, dogs got the rest. Yes, yes, they are very spoilt. Today will be a Hormel Compleats dinner. DH gone for month again, so back to my beloved microwave.
