Tonight ... grilled tilapia with wild rice and a salad of cucumber, heirloom tomatoes from our garden, bocconcini, roasted red peppers and artichoke hearts. yummmers i can hardly wait!

we went to this chinese buffet thing and it was great! best restaurant ever...I tried calamari LOL and its actually not that bad...

Bocconcini
Bocconcini (<SMALL>Italian pronunciation: </SMALL>[ˌbokɔnˈtʃiːni]) (singular Bocconcino, <SMALL>Italian pronunciation: </SMALL>[ˌbokɔnˈtʃiːno]) are small, semi-soft, white and rindless unripened mild cheeses which originated in Naples and were once made only from the milk of water buffaloes. Nowadays they are usually made from a combination of water buffalo and cow's milk. Bocconcini are packaged in whey or water, have a spongy texture and absorb flavours.
This cheese is described by its Italian name which means small mouthfuls. It is made in the pasta filata manner by dipping curds into hot whey, and kneading, pulling and stretching. Each cheese is about the size, shape and colour of a hardboiled egg: indeed an alternative name used is Uova di bufala, or “Buffalo eggs”.

Last night was my version of easy peasy Chicken Parm (chicken coated in crushed Corn Flakes with Italian seasonings that is baked in the oven on a wire rack) topped with Catelli pasta sauce with oregano added and mozza cheese. Roasted garlic mashed taters, and fresh Chilliwack corn YUM! and a garden salad.
Tonight was chili dogs with all the fixin's for the guys and Coconut basmati rice with grilled chicken and Oakanagan peaches with white wine for my poor mommy that is having a rough time after her surgery

Rum sounds good right about now!!! but I have to work today! LOL
Im gonna make a chicken stir fry tonight, need to actually start using some of this food up we have in the freezer!

Okay, so I 86'ed the stir fry idea, that will probably be tomorrow. We are having President's Choice The World's Best Meatless Burgers.

I didn't post earlier as I usually do, because I wasn't sure til the last moment! I made oven-fried chicken with homemade potato wedges, and a variety of crudités. 'Twas yummers!

Last night was tofuloaf with smashed potatoes and yellow peppers and cucumbers on the side with dip. So tasty!
