    good morning Jays!
    Not a whole lot going on here today. I used my Portable Induction Cooktop this morning to boil up 2 slabs of corned beef.
    Instructions said simmer for 3 hours, which i thought was excessive but they turned out fine. Steaming a head of cabbage to go with later on.

    Funny thing.....( unrelated ) but my DH takes these Fettle Botanical Supplements, I order them online. Anyhow I wanted to let him know the next shipment was coming and said " oh btw, your Fentanyl is on it's way ".
    Well......the glare I got from him was scary, but to be fair not half as scary as him thinking I had ordered a deadly drug for him!! I must have forgotten the name for a moment and Fetanyl slipped out. ha ha

    Good day my friends! Hope everyone had a great weekend! Not much weather wise, however I do like the smell of the air after the rain, seeing the dandelions which look so more vibrant and hearing the birds singing praises to their maker! Despite everything that is still going on, life can be good!

    3. In a separate bowl, whisk together the wet ingredients: eggs, pumpkin puree, oil, milk and vanilla. Pour over dry ingredients and stil just until dry ingredients are moistened.

    4. spoon into prepared muffin cups. Sprinkle with remaining pumpkin seeds. Bake in center of a 375F oven about 20-25 minutes or until muffins are golden and tops are firm to the touch. Let cool in tin or on rack for 5 minutes before transferring to wire rack to cool.

    5. While muffins are baking, whisk together cream cheese, confectioners sugar, vanilla and lemon juice. Set aside.

    6. When muffins are cooled completely, inject each muffin with a generous amount of cream cheese (1-2 tbsps) frosting and enjoy!

    Cream Cheese Frosting

    1/2 pkg cream cheese, at room temperature
    4 tbsps confectioners sugar (icing sugar), sifted
    1/2 tsp vanilla extract
    1/2 tsp lemon juice

    Or you can use a can of cream cheese frosting if easier (betty crocker)

    Cinnasweet Pumpkin Seeds

    4 cups pumpkin seeds, rinsed and dried
    1/2 cup margarine, melted
    2 tbsps brown sugar
    1 tsp cinnamon
    1/4 tsp salt
    1/4 cup white sugar, divided

    Prehead oven to 350F. Combine seeds, margarine, brown sugar, cinnamon, salt in a bowl. Stir to coat seeds. Spread seeds in single layer in a 9 x 13 inch sheet. Bake in preheated oven for 15 minutes; stir, return to oven for 15 minutes more, remove from oven and sprinkle 2 tbsps sugar over the seeds; stir to coat.

    Return to oven and bake another 15 minutes. Repeat for another 15 minutes. Allow to cool before serving. Store in airtight container.

    I should be in bed but Jays are desperately trying to tie the score atm.
    Leafs blew it tonight BUT....even though I am NO fan of the Habs, who could be upset with that young new NHL player ( Caufield ) scoring both O.T. winning goals ?
    Last night he broke the Sens hearts and tonight it was the Leafs. Oh and btw, these are his very first 2 NHL goals!

    Everyone is AWOL today- out stalking the neighbourhood in their Storm Trooper costumes, probably.

    I went to go pick up a prescription for my BrotherR and wound up spending almost $200 on "essentials " that I needed. And I still haven't gone Noom shopping yet. They are re-arranging things at our Zehr's and not carrying some thing that I used to like buying there. They did have canned cranberries, green beans and creamed corn all on sale for .57 so I picked up a few. Now, after I rest I have to put it all away.

    Tootie and I got soaked this morning going for a walk. It changed from a light mist to a solid rain while we were out there.

    Well- I will say "So long for now... and 'May the 4th be with you," of course.
