I already stripped the chicken. I had chicken salad on a toasted bagel with a glass of milk for lunch.

They are really simple, Natalka. I season the ribs with seasoned salt, pepper, thyme and onion powder along with a spoonful of dry onion soup mix. Toss in some plain flour, shake off the excess and shallow fry in some oil. Keep the cooked ones in a warm oven. When all are finished, toss them all in a large frying pan with some crushed garlic, careful not to burn the garlic. Last thing is to give them a splash of soy sauce.

Tonight is breaded pork chops (well breaded in flour, I don't like bread crumbs) have to use them up since by mistake we took out 8 instead of 4 the other night. With mashed potato casserole and baked candied acorn squash.

I still have 1 large chicken breast left from when I made chicken masala the other night. At Costco here, when you purchase chicken breasts, they are already put into packages with 2 and sealed. So when you purchase a package, you get 8 prepacked pouches of breasts with 2 huge breasts in each pack. I prefer the way they do it in Canada. So, since I only needed one chicken breast on Tuesday night, tonight I get to use up the other one. Dh wants me to bbq again because it's suppose to be close to 90 today (I honestly feel he just likes not having a bunch of pots to wash after dinner ). I think I'll pound it flat, then make a stuffing with some feta, spinach, red onion and some herbs. Roll and tie it up, then I can slice it and serve it with a greek salad. Hmmmm, sounds like dinner to me
We all need a little sunshine every now and then
