Salmon marinated in tamari, orange juice, green onion, grated ginger, and honey, brown basmati rice with green beans and shiitake saute, and baby romaine salad. I dislike counting portions so I try to remember that as long as veggies make up half the plate for most meals, we're good.

Yummers, that salmon looks great; it's been ages since we've had any!
Last night was KFC. husband's choice. Mind you, it was awesomely fresh and delish, so I didn't mind at all!
Tonight, pork loin in the slowcooker - keeping it simple with just a dry rub and lemon, served with potatoes and mixed veggies.
(day nine of not having a full-functioning kitchen, lol!) Where the heck is the can opener?????
And who puts only ONE plug-in in a kitchen, gah! It's in a corner of the kitchen counter.

Zonny, I'm hoping my son will come over today or tomorrow to help me with getting most of the kitchen in shape - there are just boxes shoved everywhere. Because of the lack of space, there was no going with 'put only the boxes that say kitchen on it in the kitchen', lol!

I don't know what to make today, don't feel like having a big fuss..maybe I will make my Chicken parm pizza, stocked up on lots of ground chicken when FB had it on sale for $2.88/lb (or something like that) a couple of weeks ago..(and ground turkey, for turkey burgers!)
