Last night I was alone for dinner so I did a bit of clean up, found 1 Grill'em in the freezer a bag of freezer burnt veggies tossed both of those on a cookie sheet with a couple diced up mini potatoes from a bag we bought before Christmas which needs to be used up. Baked it all off for about 30 to 40 minutes and dinner was ready with no clean up as I covered the cookie sheet in foil. Love a nice simple dinner.

This weekend I was off on Friday, so did my grocery shopping that day and worked on some cooking for the freezer. I made meatballs, a one-pot chicken pasta dish from Damned Delicious, and sloppy joes. Today I've got some Chicken Taco Soup in the crockpot, also destined for the freezer. I do this for the days that we don't plan well for lunches/supper and I can just pull something out to pop into the microwave instead of us ordering in.
The pasta thing we ate for lunch and supper yesterday, will go to work with us tomorrow. DS wants spaghetti tonight, so looks like I'm taking out a few meatballs.
As a side note, ground beef has gotten stupid expensive! Chicken has been cheaper lately.

Dinner is still a mystery, just not craving anything and really don't feel like cooking but due to money and the fact in the next month I will be on the road for 2 weeks and vacation 1 week no take out for me.

I baked ground pork meatballs. Made a sauce - gravy, mushroomey, garlicky. Served over smashed potatoes, with homemade pickled beets.
