Angela, it's awfully hot, isn't it. I dream of a/c and SNOW!!!
No cooking tonight, too hot. Plus we had a bad day with news of my husband's mom being very ill.
Husband chose KFC for supper. (burp!)

Last night I did a pasta bake with a lasagna twist. I did the pasta the way I normally do mix a homemade meat sauce (added mushrooms as I had a container to use up) with the pasta and than I layers it in the pan with layers of cottage cheese and mozzarella like you would a lasagna. It was quite good and a great comfort meal on a cold night. Also made a garlic bun to go with it, just cannot eat pasta without garlic bread.
2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

I made quinoa/kale patties yesterday. Had the leftover cooked quinoa with blueberries, brown sugar, milk and cinnamon for breakfast. Good and healthy comfort food. Will do it again.

I really like the sounds of SassyAshley's pasta bake.
I think tonight we'll have French Onion Soup & Spinach Salad. I love when someone else is making dinner. It is Dh's turn to be the cook tonight.

Tonight will be more leftovers.
We have a couple friends coming over tomorrow for a bbq. It's been very hot all week, but they are now suddenly forecasting rain. I dug some potatoes from the garden today because that is part of tomorrow's supper menu. Some of the potatoes are already the size of softballs. Steak, mushrooms, onion, fresh red potatoes from the garden, tossed salad, and puffed wheat squares. I think green grapes will also be on the menu. Trying to keep it fairly healthy. Leftover KFC tonight, will make some sort of potatoes to go with the chicken, leftover corn and mixed veggies.

it was lunch at a family place here, but it held me over till dinner and beyond. DS treated me! I had the red snapper, potatoes, steamed carrots/cauliflower/broccoli and really delicious homemade coleslaw ( oil and vinegar way ) he had the house special all day BIG breakfast!

Kids aren't home so I'm going to make a pot of orange lentil soup. They complain when we eat too many lentils (LOL) so I like to get a lentil fix when they aren't going to be home. hehe

I used Tupperware stack cooker yesterday. Baked apples on top, Swedish meat balls in the centre, and steamed broccoli on bottom. Apples were great, meat balls okay, but broccoli didn't cook well at all. I have to experiment more with this one.
