I am trying to get better at cooking at home so far this week I have had:
Monday - Leftover Roast Beef Sandwich jazzed up a little, toasted the bun added melted cheese with fried leftover mashed potatoes - perfect quick and easy meal since I was alone for dinner
Tuesday - Bello Burgers - Love these before but done on the BBQ OMG
Wednesday - Homemade Mac & Cheese with BBQ Chicken Breast
Tonight still up in the air, I really need to start meal planning again so I am sitting here everyday trying to think of something2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Anyone have suggestions for a way to use up red cabbage other than coleslaw? Any good recipes you love?

The only other way I remember eating red cabbage that WASN'T coleslaw was in a sweet and sour soup my mom used to make when I was little. I couldn't tell you how to make it though. LOL. Maybe google can help?
Tonight we are having meatloaf, roasted red potatoes and sweet beets. It's a purple and brown dinner. hahaha. Can't wait to see the look on my kids' faces. (It will probably be the look of disgust with my luck.)

wimbly, use it in any casserole - it turns a sad pink/brown when cooked, though.
Or fry some up with onions and sausage, wieners, or ham - yum.
Borscht, and mystery casserole tonight - tastes pretty good! Had some leftovers from borscht making to use up in something.
1/3 package of frozen hashbrowns on the bottom, then layered about a cup and a half of grated carrots, 1/2 cup green beans, cup and a half of sauteed cabbage, with diced garlic sausage put on top. Added a sprinkling of oil, salt, garlic powder, in at 375 for an hour - it's great.

Last night I caved to ordering pizza, mom was making salsa and the kitchen could not be used. Good news is it is also today's lunch and still have enough for more leftovers on the weekend. Next week we try to go all week without take out.

GAH! I don't know what to make for supper. I'm all supper-ed out this week.
I wonder what my kids would say if I said "I don't wanna cook; you can't make me!!!!"
( I just heard that last week from my youngest when I asked her to pick up her stuff that was lying all over the living room. LOL)

this evening I had a grilled chicken breast on toasted multi-grain bread with bacon, cheese, tomato, lettuce, mayo & a salad with mixed lettuce, sliced strawberries, fava beans , corn (I know weird combination) but it was really good
