Just a warning, Angela, it ain't diet food!

I used my own pastry recipe but pretty much followed the instructions for the filling. If I ever made it again, I would use a bit less sugar because it was quite sweet. Might have been my fault though because I ran out of bittersweet and used some semi-sweet to top up.

Yesterday I pulled out ground beef because I planned on having nacho chips with meat sauce, cheese, sour cream and salsa. Unwrapped the brown package to discover it was breakfast sausage! My dad did not tell me he had included a couple packages of sausage along with the ground beef, farm chickens, and white tailed deer roast at Christmas time. So we ended up having sausage, hash browns and boiled veggies for supper last night Going to make the nachos tonight. Planning on roasting one of those farm chickens tomorrow.

OK, I gotta ask, what is Wifesaver Casserole?

Tonight we're having subs. I order Quiznos for work fairly regularly and they have a monthly draw from their catering clients. And guess what, I won! I have a platter for 10, DH is picking it up tonight (since I am off and Quiznos is downtown). Funny enough, I won it last month too, we ate subs all weekend!

I have been good all day ( even though holly gave us all a weekend to relax from the diet merry-go-round) I ate 2 huge bowls of my " all veggie " soup that I simmered first thing this morning. Everything but the kitchen sink went into that sucker, including caramelized onions and mushrooms, cabbage, spinach, broccoli, cauliflower, fresh sage leaves, fresh curly parsley, celery, carrots, rapini, and leftover baked acorn squash.

Might make a toasted GF sandwich with skim milk mozzarella later on though.

Chicken with Mushroom soup over rice. Had to be a quick and easy dinner as my meeting at work got pushed back and I didn't get home until almost 6. So even though mom cooked she want something simple as at one point I thought I might have to reheat.

Initially got its name because you can make it the night before, and pop it in the oven Christmas morning for breakfast.

Using a 9X13 pan, lightly grease and fill with slices of bread, you can squish to fit (6-8). Layer overtop slices of ham, then cheddar cheese.
Then put slices of bread overtop, like making sandwiches.

Then pour over this mixture -

In a bowl, whisk together six eggs, 3 cups milk, salt and pepper, teaspoon mustard, shakes of Worst. sauce and Tobasco; finely minced onion.

Squish bread down a bit so it's all soaked in. Cover pan and put in fridge overnight or at least six hours.

To bake: oven at 350 degrees

Melt 1/2 cup margarine and pour over the top of soaked mixture. Then sprinkle over that crushed cornflakes, be pretty generous.

Don't cover - bake an hour.
It puffs all up, but will deflate when it comes out of oven.
Don't cut into it for at least 15 minutes after you take it out.

    I like mine with ketchup!

(I've made this with all types of cheese - grated, or sometimes Kraft slices, today I used Cheez Whiz - just put big dollops of it on, and it was yummy.)
