    Decided on Nachos, thought Mom would want take out since it was her bday but she said maybe this weekend so just made Nachos, quick & easy

    I have some Leftover Pasta in the fridge we need to use up so I am thinking of making Slow Cooker Garlic Chicken Alfredo. You add Broccoli to the Slow Cooker with the Chicken so we will just need to heat up the pasta and serve.

    Not sure just yet, but some of these creations will be served around dinner time, perhaps sooner.

    Thawing 2 large sheets of puff pastry now. I'll be altering one recipe using creamy goat cheese instead of ricotta.
    It's a carrot coin/cheesy tart thing. Savory herbs involved. The pictures get me drooling!

    Next is to make a few Italian pinwheels because that recipe sounds so simple and had like 4 ingredients.
    I may have to thaw 2 more rolls of pastry if I want to make up a batch of Beef Empanadas, but those I can fill, freeze, bag and bake later.
    The last recipe I chose just to use up some leftover ham, it's a spicy ham/pineapple tart. Those are squares of pastry with the mixture all piled in the centre.

    leftover Chicken Jambalaya. It was so good...I was kind of surprised how easy and good it was. We didn't use the instant pot, just did it in a large pot on stove.

    Comfort food to supper tonight. Im making an old fashioned meatloaf with mashed potatoes, gravy, mashed carrots and turnips with some honey and a big green salad with tomatoes, cucumbers, green onions, diced celery. I dont use any tomato sauce for my meatloaf.
