Chicken Adobo Recipe.
Brown both sides of 10 -12 chicken thighs in a large skillet with 3 tblsp oil. Transfer thighs to a bowl. in same pan sauté 3 onions ( thinly sliced ) for 3 min.
Add 1.5 cups apple cider vinegar, 3/4 cup water, 3/4 cup soy sauce, 12 tblsp honey, 12 cloves garlic ( minced ), 3 tblsp. peppercorns
and 6 Bay leaves to the pan. Bring to a boil, add thighs back in, simmer on low for 25-40 minutes. Turn the thighs over halfway through cooking.
Remove Bay leaves. Serve over steamed rice.

Just read your sad post about the sudden passing of your MIL. My deepest condolences.
