Tonight I did oven roasted vegetables (beets, carrots, zucchini, and broccoli) tossed in balsamic vinaigrette. With creamy garlic cauliflower mash and a pork kabob. Was carving some real meat!! Of course DS made me snap a picture of his too haha.

This was an extremely filling dinner, only one for the each of us and we were stuffed...I wish we didn't eat so late! Whole grain tortillas filled with salmon (sprinkled with cumin and cayenne), roasted garlic tomatoes, black beans, old cheddar, avocado, and arugula.
