Last night I decided to do a nice Sunday Dinner, I did a beef roast with mashed potatoes and gravy and roasted cauliflower.
Tonight's dinner not sure yet will see what I come up with once I get home. I am alone for dinner so haven't decided if I will go simple and quick or go all out. I need to start eating better when it is only me for dinner.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Since I had 3 nights off of cooking in a row and I was invited again to MIL's for dinner tonight! I decided pain or no pain I'm going to cook. I have a yummy huge pot of meat sauce simmering away for 2 hours already, a smallish pot of potatoe leek soup going and I still have a pound of ground turkey to do something with and I hope to make some blueberry cinnamon rolls that I found on Pinterest

We used last night's leftover pork kabobs and turned pita filling. Also picked a fresh tomato and some fresh Swiss chard to go in the pitas, along with marble cheese and condiments of our choice. Had it all with a glass of milk.

I have a strong urge to make Thanksgiving food, my favourite! The weather is perfect for it.
Stuffing, mixed veggies, mashed potatoes + gravy , jambon! Not sure if I will actually make it but it sounds tempting.
