Exactly! I have replaced the rice in cabbage rolls, stuffed peppers or zucchini dishes with success. I still make a diet version fried of rice ( not fried in bad stuff, you know) because sometimes you just want the rice! lol

Hi Natalka, the quinoa is the easiest thing to cook. Now there is a difference in some of it though, many people swear you have to rinse it first, but so far I have never done it and I have not had it turn out weird. You can if you like. So place 2 c water to boil, when rolling, add 1 cup quinoa, turn heat low right away, cover with lid with just a smidge open so it doesn't spill over, cook 15-20 min. If after 15 minall the water is absorbed, it is done, remove, let sit covered 5 more min, then fluff and use in whatever you like. If there is still a bit water still in pot after 15 min, keep cooking 5 more min. till absorbed. I know on line there are many recipes, all vary, but whatever spices.veg,meat you add makes it unique and desirable for your family.
Mine, so far have embraced it, instead of giving it the " stink eye " like Tofu. lol Good luck.
